Our brand of Vermouths ANTOLLINI is a new interpretation of the old appetizer recipes that we made dozens of years ago at AURIAN. We have reinvented them with the ambition to create the best vermouth there is, with the finest ingredients, and have spent more than two years of work and refinement to finally bring you this new development.
Our vermouths are made from concentrated must mutated with cognac, which gives them an exceptional roundness and 'butteriness'. They undergo, except for the Bitter rouge, an addition of Armagnac, which for its part brings an aromatic component characteristic of our old brandy: we take advantage of each of the advantages of the two finest French brandies. This must is then assembled with our infusions of herbs, fruits and spices: our know-how as a liqueur maker at its peak.
The Bitter Rouge and the Old Armagnac and Miel des Landes are blended with a locally produced red wine, carefully maderized and aged for two years in Armagnac barrels, in our century-old cellars. The process will kill more than 30% of the initial wine volumes.
No chemicals or artificial products (other than a small amount of sulfur) are used to stabilize or enhance the product.
Our vermouths are the culmination of our long know-how in the elaboration of fruity balances, with herbs and spices, coming from our profession of artisan liquorist, gracefully combined with our in-depth knowledge of aging in barrels and balances. armagnac, a profession we have been doing every day since 1880.
